(3) medium to large cucumbers
(5) or (6) Roma tomatoes – or a pint of grape tomatoes
(1) ball of fresh mozzarella
Extra virgin olive oil
Kosher Salt to taste
Large Salad Mixing Bowl – min 4 to 5 quart size
NO COOKING REQUIRED! This keeps the house cooler on a hot day.
Peel the rind off the cucumbers and discard rind. Move the cukes to the cutting board and chop into bite size chunks. Place the chunks in the mixing bowl.
If using grape tomatoes – slice into halves and place into mixing bowl. If using Roma tomatoes, cut again into bite size chunks and place into mixing bowl.
You can now grab the fresh mozzarella. By either using a knife or with your hands, shred the ball into desired chunk size and place into the mixing bowl. (After you try this a few times, you may want to add a second ball of mozz.)
Stir all ingredients until well mixed.
Take olive oil (using a funnel top) pour around the ingredients three times in a circle. Then take the kosher salt and add pinches. Remix and taste
Keep adding kosher salt only if you feel it needs it. All you are really trying to do is “wake up” the flavor of the vegetables.
Plate to bowls and enjoy!
